Dyuvech (ђувеч)

Here is my recipe for a Serbian dish called dyuvech (ђувеч) that uses sour pepper ferment. It is a light dish best made with summer tomatoes and peppers when they are at their sweetest.

Ingredients:
1 onion, minced
3 garlic cloves, minced
2 red peppers, cut into small chunks
Thyme (optional)
2 tomatoes, quartered (or 1/2 can of tomato)
2 tbsp sour pepper ferment
1/2 cup short grain rice
2.5 cups water

Fry onion and garlic on medium flame until translucent. Add chopped pepper and fry 5 min until soft. In go chopped tomatoes and sour pepper mash, stir them slowly. Finally add rice and water, covering when it starts to boil. Cook it for 25 minutes at low flame, stirring occasionally. Try it when it’s done and season if necessary. Serve with an abundant summer salad and a slice of crusty bread if you wish.
